Remove the seeds and stems from the jalapeños; finely chop one of them, then slice the other two into two dozen very thin strips and keep them aside.
Everyone at the gathering was clamoring for the recipe after I served these! I prepared 18 eggs with adjusted ratios, and not a single one was left. Incredible!
I served these at a wine tasting party, and all 24 were consumed instantly. It is a wonderful recipe, although I did add a few extra jalapeños for a spicier kick and used smoked paprika.
I've made this on numerous occasions, and everyone thoroughly enjoys them!
