Halve the eggs longitudinally and scoop the yolks into a mixing container. Use a fork to crush the yolks, then fold in the chopped jalapeño, shredded Cheddar, mayonnaise, red onion, and mustard.
Everyone at the gathering was clamoring for the recipe after I served these! I prepared 18 eggs with adjusted ratios, and not a single one was left. Incredible!
I served these at a wine tasting party, and all 24 were consumed instantly. It is a wonderful recipe, although I did add a few extra jalapeños for a spicier kick and used smoked paprika.
I've made this on numerous occasions, and everyone thoroughly enjoys them!
