    Carefully wash individual lettuce leaves, dry them gently to avoid breakage, and put them aside.

    Heat oil in a large skillet on medium-high. Brown the ground beef, breaking it into small pieces, for about 5 to 7 minutes. Remove the grease, and set the meat aside in a bowl.

    In that same pan, sauté the onions until they become soft, which should take about 5 to 7 minutes.

    Combine the hoisin, garlic, soy sauce, vinegar, ginger, and chili paste until mixed. Add the water chestnuts, scallions, sesame oil, and cooked beef, then stir for roughly 2 minutes until the onions soften.

    Arrange the lettuce leaves around the perimeter of a large dish and place the meat mixture in the middle.

I’ve prepared this three times for guests and everyone loved it. I ground my own chicken breast for the base. I add oyster sauce, though extra hoisin would work too since it needs a bit more liquid. I also add carrots for crunch and color, plus a tablespoon of peanut butter and 1/2 teaspoon of Chinese five spice. I served it with turmeric rice. Note: while it's great as written, I enjoy personalizing it.
