    Collect all the necessary components.

    Place the noodles in a vessel with boiling water for approximately 5 minutes until tender, then trim them into smaller pieces.

    Warm sesame oil in a wok set to a medium-high temperature. Incorporate the minced beef, vegetable medley, onions, and minced garlic. Sauté for around 6 minutes until the meat is mostly browned, then take the pan off the burner.

    Combine the noodles with the mixture and wait for the liquid to be fully soaked up.

    Mix the soy sauce into the prepared filling. Set your air fryer to heat up to 350 degrees F (175 degrees C).

    Position one egg roll skin flat, then spread a portion of the mixture diagonally across it.

    Fold the top point over the meat, tuck in both side edges, moisten the center with a little cold water, and finish rolling to secure the package. Do this for all remaining skins and filling.

    Apply a layer of vegetable oil to the exterior of the spring rolls using a brush.

    Place a group of spring rolls inside the air fryer tray and fry for roughly 8 minutes until they achieve a crispy, golden-brown texture. Continue with the rest of the batches.

I swapped out the beef for some leftover duck legs and included scallions as well. They emerged from the air fryer with a beautiful golden finish. They were delicious and were a big hit with everyone. I plan on preparing a large quantity to freeze ahead of a Chinese birthday party, where we will have 17 air fryers running for a hot buffet, with the rolls held in 3 big electric ovens. Wish us well!
