Ingredients
- *2 (15.5 ounce) cans garbanzo beans, drained
- *½ cup water
- *¼ cup tahini (sesame-seed paste)
- *¼ cup fresh lemon juice
- *2 tablespoons olive oil
- *1 canned chipotle pepper in adobo sauce
- *2 cloves garlic
- *1 ½ teaspoons cumin
- *1 (7 ounce) jar roasted red bell peppers, drained
- *½ cup chopped cilantro
- *6 oil-packed sun-dried tomatoes, drained
- *½ teaspoon salt
- *ground black pepper to taste
Directions
Step 1
Combine chickpea beans, H2O, sesame paste, lime juice, extra virgin olive oil, smoked jalapeno, minced garlic, and ground cumin inside a blender until the texture is creamy. Incorporate red bell peppers, fresh cilantro, dried tomatoes, seasoning salt, and pepper; use the pulse setting to combine everything into a coarse mixture. Pour into a bowl for serving.
