Set the egg white halves on a plate with the hollow side facing up. Use a spoon to fill the whites with the yolk mixture, then top with pickled ginger and pea shoots.
These tasted incredible!
This recipe might be okay, but if you stick to the instructions of bringing eggs to a boil and then resting them in the water for 15 minutes, the yolks will still be runny and it will be a disaster. I ended up wasting the yolks and just keeping the whites.
Wonderful. I didn't have pea shoots, so I substituted tiny bits of spicy pickled green beans, like the ones used for Bloody Marys.
