This tasted incredible. I swapped the vanilla pudding mix for a cheesecake version. For a potluck, I hollowed out a pumpkin, cleaned it out, filled it with ice since we are in Florida, and nestled the container of dip into the ice. Everyone loved it, even those who usually dislike pumpkin pie. I accompanied it with ginger snaps, cinnamon graham crackers, and apples.
It was a huge success as a holiday appetizer, winning over even those who usually avoid pumpkin. It was fantastic paired with graham crackers and apple wedges, and I plan to experiment with vanilla wafers and ginger snaps in the future. The recipe was perfect as written. I prepped it a day early and did the actual baking just before serving.
